{"id":2142,"date":"2011-11-13T22:51:27","date_gmt":"2011-11-14T05:51:27","guid":{"rendered":"http:\/\/nomad.yosemite.net\/?p=2142"},"modified":"2012-11-19T16:03:23","modified_gmt":"2012-11-19T23:03:23","slug":"currant-buns","status":"publish","type":"post","link":"http:\/\/nomad.yosemite.net\/?p=2142","title":{"rendered":"Currant Buns"},"content":{"rendered":"<p>My better half remembers currant buns from boyhood.\u00c2\u00a0 This recipe&#8211; changed somewhat, and adapted for American cooks, originated on cookeryclub.co.\u00c2\u00a0 Easy, delicious, and not too rich, it makes a baker&#8217;s dozen.<\/p>\n<p>Yeast Mixture<\/p>\n<ul>\n<li>1\/4 cup white bread flour<\/li>\n<li>1 cup heated milk (temperature for bread-making; nonfat is fine)<\/li>\n<li>2 envelopes dry yeast ( 1\/4 oz. each, regular, not &#8220;Rapid&#8221;)<\/li>\n<\/ul>\n<p>Dough Mixture<\/p>\n<ul>\n<li>2 1\/2 cups white bread flour<\/li>\n<li>6 tablespoons sugar<\/li>\n<li>1 1\/2 teaspoons salt<\/li>\n<li>1\/2 teaspoon allspice<\/li>\n<li>4 tablespoons softened butter<\/li>\n<li>1\/2 beaten egg (saving the remainder for &#8220;egg wash&#8221;)<\/li>\n<\/ul>\n<p>Glaze<\/p>\n<ul>\n<li>Equal parts sugar and water, boiled together.<\/li>\n<\/ul>\n<p>Beat together the yeast mixture and set it aside a few minutes in a warm place.\u00c2\u00a0 It should start to foam up.\u00c2\u00a0 While the yeast mixture is proving, combine the ingredients for the dough mixture.\u00c2\u00a0 The yeast mixture having foamed up nicely, add it to the dough mixture.\u00c2\u00a0 Knead for about five minutes by hand or three minutes with a dough hook.\u00c2\u00a0 If the dough is too soft, add more flour, perhaps about 1\/4 cup, as you go.\u00c2\u00a0 (If using the dough hook, follow up with a minute or so of hand- kneading.)\u00c2\u00a0 Place the dough in a bowl with a dampened towel over the top and leave in a warm place to rise until double.\u00c2\u00a0 Punch down the dough.<\/p>\n<p>Knead in:<\/p>\n<ul>\n<li>2\/3 cup (4 oz.)\u00c2\u00a0 currants.<\/li>\n<\/ul>\n<p>Preheat the oven to375 degrees.\u00c2\u00a0 Divide the dough into 12 parts and form into buns.\u00c2\u00a0 Place the buns on a greased cookie sheet.\u00c2\u00a0 Brush them thoroughly with a &#8220;wash&#8221; made from the remaining egg, mixed with a little milk.\u00c2\u00a0 They may be arranged so they are barely touching.\u00c2\u00a0 Let rise again in a warm place, until nearly double.\u00c2\u00a0 Bake on the middle rack of the oven, for 12 to 14 minutes.\u00c2\u00a0 Brush with the boiled sugar-water glaze.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>My better half remembers currant buns from boyhood.\u00c2\u00a0 This recipe&#8211; changed somewhat, and adapted for American cooks, originated on cookeryclub.co.\u00c2\u00a0 Easy, delicious, and not too rich, it makes a baker&#8217;s dozen.
