{"id":38,"date":"2009-05-18T12:08:03","date_gmt":"2009-05-18T19:08:03","guid":{"rendered":"http:\/\/nomad.yosemite.net\/?p=38"},"modified":"2009-05-18T17:10:50","modified_gmt":"2009-05-19T00:10:50","slug":"bakewell-tarts","status":"publish","type":"post","link":"http:\/\/nomad.yosemite.net\/?p=38","title":{"rendered":"Bakewell Tarts"},"content":{"rendered":"<p>These British treats are delectable, complex in flavor, and easy to make.\u00c2\u00a0 If you are lucky, you already have a set of the individual tart pans that you&#8217;ll need (mine are fluted and a bit more than an inch in diameter at the base and a little less than three inches at the top).<\/p>\n<p>Short pastry (enough for a standard two-crust pie&#8211; recipe given below)<\/p>\n<p>Filling:<\/p>\n<ul>\n<li>4 oz. butter or solid margarine<\/li>\n<li>4 oz. fine sugar (baker&#8217;s or &#8220;caster&#8217;)<\/li>\n<li>4 oz. ground almonds<\/li>\n<li>2 well-beaten eggs<\/li>\n<li>1 t. almond extract<\/li>\n<li>Seedless raspberry jam<\/li>\n<li>White powdered sugar icing<\/li>\n<\/ul>\n<p>Prepare the pastry and allow it to &#8220;rest.&#8221; Then roll it out the pastry and divide it among about 20 tart pans.\u00c2\u00a0 (The pastry is baked <em>inside<\/em> the fluted pans.) Pre-bake the shells for five minutes at 400 degrees.\u00c2\u00a0 Remove the shells from the oven, but leave them in the pans.<\/p>\n<p>Now prepare the filling. Cream together the butter and sugar.\u00c2\u00a0 Add the eggs and almond extract and stir together.\u00c2\u00a0 Put one teaspoon of the jam in each tart shell and then add about two teaspoons of the filling.\u00c2\u00a0 Bake about 20 minutes at 350 degrees.<\/p>\n<p>After the tarts have cooled a bit, you should be able to remove them easily from the pans.<\/p>\n<p>Make the icing according to the directions on the powdered sugar package and spread the icing on the cooled tarts.<\/p>\n<p><strong>Short pastry for a two-crust pie or for 20 tarts<br \/>\n<\/strong><\/p>\n<ul>\n<li>2 1\/4 cups pre-sifted all-purpose flour<\/li>\n<li>1 t. salt<\/li>\n<li>1 cup shortening<\/li>\n<li>1\/4 cup or less of water<\/li>\n<\/ul>\n<p>Stir the flour and salt together and cut in the shortening until the lumps in the mixture are, on average, pea-size.\u00c2\u00a0 Lightly mix in enough of the water to make the dough easy to handle.\u00c2\u00a0 Form it together, lightly, into a ball; cover it, and allow it to rest for at least ten minutes at room temperatire before rolling it out on a floured pastry cloth or floured waxed paper.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These British treats are delectable, complex in flavor, and easy to make.\u00c2\u00a0 If you are lucky, you already have a set of the individual tart pans that you&#8217;ll need (mine are fluted and a bit more than an inch in diameter at the base and a little less than three inches at the top).
